This basic vinaigrette is a family favorite. I make a large batch and keep it in the fridge in a mason jar or cleaned salad dressing jar for a quick and healthy salad dressing that's always a hit. It's easy enough to make right before dinner, too. Just use a splash of each of the ingredients over your salad and toss!
1 cup extra virgin olive oil
1/2 cup fresh lemon juice (from about 2-3 lemons)
1/2 cup red wine vinegar (don't use white wine vinegar, it's not sweet enough)
2 tbsp dried oregano (optional)
2 tbsp freshly ground black pepper
salt to taste
Place all ingredients in a mason or dressing jar and shake to combine.
