This salad could not be simpler, but the combination of peppery arugula, lemon, and salty parmesan is intoxicating. Even picky eaters will clean their salad plates.
8 cups baby arugula, washed and dried
juice of 1 lemon
1/4 cup olive oil
1 cup parmesan cheese shavings
salt and pepper to taste
Whisk together lemon, olive oil, salt, and pepper. Toss with arugula and place on individual salad plates. Sprinkle with parmesan cheese shavings.
