If you love risotto but hate the long cooking time, this is a great cheat! Adding canned tomatoes to the cooking water helps the flavor seep into the pasta as it cooks.
serves 4 as a side or 2 as a main dish
2 cups orzo pasta
1 cup canned diced tomatoes in juice
1/2 cup parsley, chopped
3/4 cup feta cheese, crumbled
1 tbsp garlic salt
pepper to taste
Bring 4 cups water to a boil and salt with garlic salt. Add orzo and tomatoes and cook until pasta is al dente. strain pasta and tomatoes (keep tomatoes!) Add back to pan and stir in remaining ingredients. Serve immediately.
