chocolate berry trifles

This no-bake dessert (just buy the cupcake at the grocery store bakery!) can be made ahead and kept in the refrigerator for a few hours. Serving them in champagne glasses makes it extra special.

serves 2

1 unfrosted chocolate cupcake, cut into small chunks
4 oz frozen mixed berries
2 tbsp sugar
1/2 dark chocolate candy bar cut into pieces or 3 oz dark chocolate chips
whipped cream
2 sprigs fresh mint (optional)

Toss berries with sugar in a microwave safe bowl and microwave for 3-5 minutes or until warmed through (stop every minute or so to stir). Microwave chocolate for 2-3 minutes or until melted. Starting with berries, layer 1 tbsp berries, few pieces of cupcake, drizzle of melted chocolate, and a spoonful of whipped cream, in that order, into two champagne glasses until glasses are full. End with whipped cream and top with a mint sprig, if desired.
