grilled mussels

Mussels are incredibly easy to cook, and are especially delicious when grilled. Be sure to clean and debeard the mussels before cooking. We love this as an appetizer, or tossed with pasta and a squeeze of lemon for a fast supper.

Serves 4 as an appetizer

3 lbs. live mussels, scrubbed, beards removed
4 tbsp salted butter
2 garlic cloves, minced
2 tbsp red pepper flakes (optional)

Heat grill over medium heat. Place mussels onto grill crosswise, so they don't slip through grate. Meanwhile, heat butter, garlic, and red pepper flakes (if desired) in a heatproof dish on the grill or in the microwave. Using tongs, remove mussels once they open, approximately 3 minutes. Serve with garlic butter for dipping.
