I love original ceasar dressing from the Joy of Cooking, but not everyone is a big fan of raw eggs and anchovies. This recipe tastes just like real ceasar dressing, but without the questionable ingredients (or their calories).
makes 1 cup (enough for 4 salads)
1 large garlic clove, mashed into paste or finely chopped
juice of 1 lemon (about 4 tbsp)
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
1/4 cup grated parmesan cheese (the stuff in the green can, not shredded)
2 tbsp dijon mustard
salt and pepper to taste
whisk ingredients together and toss with romaine lettuce.
