Cook once, eat twice (or three times...)

So my new thing is to cook a large batch of meat (chicken, pork, or beef) in the slow cooker and then use it to create at least two unique recipes. Not only is slow cooker cooking easy, it's also healthful (you don't have to add any oil or butter), and inexpensive, as the best cuts of meat for this use are usually the cheapest.

My first attempt was with cuban pork, and resulted pork tacos and then pork enchiladas. Today, I tried my hand with chicken: chicken leg quarters were just $0.99/lb at the grocery store, not even on sale! So for $5.95 and a few pantry ingredients, I created 3 dinners for this week: black bean chicken chili, bbq chicken pizza, and healthy chicken parmesan subs.
