this week my goal is to spend no more than 15 minutes in the kitchen making dinner, after a few hours of slow cooking monday night. New to the blog is the Cook Once, Eat Twice series, where I'll attempt to make a few meals out of one batch of meat. This week is chicken - enjoy!
monday modern sesame noodles (without the chicken, as we're also trying
to go vegetarian once a week!)
tuesday black bean chicken chili, side salad with perfect vinaigrette
wednesday pork enchiladas (all ready to go in my freezer thanks to last
week's Cook Once, Eat Twice), yellow rice
thursday bbq chicken pizzas, side salad
friday kielbasa and kale soup
